Reflecting on the process of bread making, it requires patience (waiting for the bread to rise), some hard-work on kneading, repeating the process fornfour times. Open heart and willingness in accepting any result. Have understanding in the process, for example the kneading process is a must to enhance good texture for bread, apply a layer of extra virgin oil for coating add brownish colour to bread. I had a feeling of subtle joy during tasting the bread after it was baked. But the feeling does not last long, it just disappeared. Simile to our life, nothing can last forever, or unchange forever. We need to embrace change.



Since yesterday was a weekend, i was enjoying it by making bread. Even though, previously all my attempts making bread had failed. This time, it was a success. During that moment, when seeing the bread was baking in the oven, i was anxious wanting it to rise further. When it had arisen, my feeling changed. But it was very subtle. Once done, i let it cool off for a few minutes, sliced a piece and tried it. Wow, yummy, fresh with bread aroma, soft inside and crunching outside. Good.
昨天是一个周末,通过做面包来享受它。即使如此,以前我有尝试做面包但都一一失败了。这次成功了。在那一刻,当看到面包在烤箱里烤的时候,我很想希望它可以升起来。当它上升时,感觉改变了。但这非常微妙。烘焙完成后,我让它冷却几分钟,就切成薄片。哇,好吃,新鲜的面包香气,里面柔软,外面脆脆。好味道吔。 考虑到面包制作的过程,需要耐心(等待面包升起),揉捏上的一些辛苦工作,重复该过程四次。敞开心怀并乐于接受结果。要对过程中有所了解,例如,捏合过程是增强面包良好口感的必要条件,在还没烤的面包涂一层油可为面包增添褐色。品尝时,❤️里有喜悦的感觉,这感觉是一刻间又消失了. 真是无常丶无常是指世界没有永恒不变的东西或事物。
Ingredients for my wheat bread.
- 200g wheat flour + 50g bread flour (high protein flour)
- 200g water (luke warm)
- 4g yeast
- 30g of brown sugar
- 10ml extra virgin oil
- 4g salt
- 250g raisin
- 250g pecan
- 250g walnut
A. add luke warm water to yeast, add brown sugar. Wait for yeast to ferment for about 15 minutes or when see some big bubbles appear.
B. add wheat flour and bread flour and salt, and extra virgin oil (leave out a bit to coat the outer layer of bread)mix them well.
Pour fermented yeast water bit by bit to flour. Set aside some water just in case the flour is too dry to knead. After you knead the bread set it aside to rise for 25 minutes. Repeat this kneading process and leave it to rise for three times.
The fourth time put your dough into a container which can straight put to oven so you do not need to transport the dough again. Then add in all raisins, pecans and walnuts to the dough. Mould the dough to the shape you prefer. Leave it to rise for 30 minutes. Coat your dough with the remaining virgin oil. Preheat your oven to 195C and bake the dough for 30 minutes. Woola…you can smell your bread when you do your kneading and when it comes out from the oven. Of course, they smell differently. Enjoy your bread making process. Happy baking.
